Broccoli Dish

Bake a piece of skinless, boneless chicken

In a pan, on low heat, fry a small handful of onion and one clove of garlic

Cook half cup of brown rice

Add chicken and rice to pan when done, and add 2 cups low sodium chicken broth to pan

Bring to a boil, bring heat to med. low heat, and cover.  Cook for 12 min.s

Add two cups of mixed broccoli (I use frozen) recover, and cook for 10 min.s  Stir every so often.

Add cup of shredded cheddar cheese to the pan, mix in, and recover.  Take pan off burner and let sit for 8 min.s

Add 1/2 cup shredded cheddar cheese, cover and let sit until melted and serve.




Chicken Quesadillas

Bake a piece of skinless, boneless chicken

During the last 20 min.s of baking, chop some red and green bell peppers, some onion, and put in a frying pan with a tsp or two of olive oil on med. low.

Sprinkle about 2 tbsp of chilli powder and toss with veggies while being fried.

When chicken is cooked, cut up in pieces and add to frying pan with veggies, and add another tbsp of chilli powder.

Grate some cheese and place with chicken/veggie/chilli powder mix on a whole grain wrap.  Simple, but delicious.

*If you want the traditional quesadilla, leave wrap flat, add cheese, chicken, veggies, then top with another wrap and lightly fry each side of wraps until crispy.  I eat a low carbohydrate diet, so I just wrap up everything with one wrap, and eat it like that.  Either way works.*




Homemade Chicken Noodle Soup

  • Bake a piece of skinless, boneless chicken
  • Add to crock pot with:

-1 big carrot diced up

-1 celery shoot chopped finely

-1 small onion

-2 cloves of minced garlic

-1/2 tsp of oregano

-salt and pepper to taste

-5 cups low sodium chicken broth

-5 cups water

Cook in crock pot on high for 3 1/2 hours.  Add 1 cup of noodles of choice and cook on high for 1/2 hour more.
